The new menu features classic spritz serves, alcohol-free options and creative summer cocktails, alongside seasonal specials celebrating fresh vegetables, seafood, lemon and the sun-soaked flavours of the Italian coast.

Highlights include Carlo’s Cosmo, made with limoncello, Aperol, cranberry juice and lemon, the indulgent Rocher Martini with Grey Goose, Frangelico, Baileys, espresso coffee, chocolate and hazelnut, and the Basil Paloma, which blends Patrón Añejo Tequila, The King’s Ginger, basil, ginger beer, agave and lime.
There is also the Piña Express, made with Bacardí Coconut, lime, chive syrup and mint.
Seasonal Italian specials for summer
San Carlo’s seasonal dishes vary between restaurants, with flagship sites including Liverpool launching a selection of new antipasti and secondi.
The summer specials focus on fresh, bright Italian flavours, with ingredients such as asparagus, artichoke, seafood, fennel, chilli and lemon bringing a Mediterranean feel to the menu.
Highlights include asparagi bianchi carbonara, a dish of white asparagus with Grana Padano and pecorino fondue and crispy guanciale, and insalata di carciofi, a marinated artichoke salad with Grana Padano and rocket.
There is also foglie d’ulivo asparagi e guanciale, an olive-leaf-shaped pasta served with asparagus cream, crispy guanciale and pecorino.
For a main with proper summer flavour, polletto alla griglia offers charcoal-grilled whole chicken marinated in lemon, wild fennel, honey and chilli.
