Homemade Birthday Cake – Self Isolation
Celebrating a birthday during self isolation? It’s time to get creative in the kitchen. A delicious way to mark any special occasion is with a homemade birthday cake. If you have enough ingredients in your kitchen cupboards, here is our favourite Lemon drizzle cake recipe:
Lemon Drizzle Birthday Cake Recipe
Ingredients:
- 170 g self-raising flour
- 170 g caster sugar
- 170 g butter or margarine
- 2 medium eggs
- 3 unwaxed lemons
- 4 tbsp icing sugar
Instructions:
- Preheat the oven to gas mark 4, or 180 centigrade and in a bowl, mix the sugar and butter until creamy.
- Once it has a creamy consistency, add the eggs and whisk well.
- Sift the flour and fold into the mixture gently.
- Add the zest of the lemons and half of the juice.
- Add the mixture to a greased cake or loaf tin and bake for 25 minutes or until bouncy to touch and golden brown.
- Meanwhile, mix the remaining juice with icing sugar until smooth.
- Make holes in the lemon cake with a skewer or thin knife but not all the way through to the bottom of the cake. Then drizzle the lemon icing over the cake.
- Allow to cool slightly and serve with a cup of tea or coffee.
- Add candles to celebrate a birthday if you have them. If not, the birthday boy or girl should have the honour of being the first to cut the cake and taste it.
